Pink ibia, shelled
The ibia is a Colombian autochthonous tuber, especially in the Boyaca region. It is part of a mixture of stewed tubers called Boyacense stew. It is a little known and poorly marketed tuber. There are three varieties of ibias in Colombia, the pink, sweet flavor and the largest of all; the yellow one of smaller size and less production than the pink one and the red one that is smaller in size and very little cultivated for that reason it is not so well known. The ibias are characterized by their good quality starch.
