The pigeon peas or pigeon peas as they are known in some areas of the Latin American Caribbean where its preparation is very popular, is originally from Asia, although there are indications of its origin in Africa. Also known by other names like Bean de palo, Gandú, Cachito. They are the seeds of a perennial shrub that are used in human food and animal feed as forage. In Panama it is prepared with coconut and is part of the country's national dishes, widely used in tropical and sub-tropical regions.
