Pipián tamale
The pipián is in essence a sauce or stew with which tamales of ground corn are filled, a stew that in turn is mixed with beef or pork, or some variable poultry. In this preparation of pipián, in the Colombian Cauca area traditional condiments are used and peanuts and yellow or Creole potatoes are added, in the preparations that are made in some areas of Mexico pumpkin seeds and achiote are used.
